BLT Salad with Buttermilk Dressing
START TO FINISH 30 minutes
SERVES 4
Ingredients:
- 2 Tbsp. crème fraîche or sour cream
- 2 Tbsp. mayonnaise
- 1 Tbsp. snipped fresh dill weed
- 1 Tbsp. apple cider vinegar
- 1 clove garlic, minced
- 1⁄4 cup buttermilk or sour milk*
- Salt and freshly ground black pepper
- 2 heads romaine lettuce
- Olive oil
- 4 slices bacon, crisp-cooked
- 1 cup cherry tomatoes, halved
- 1⁄2 cup grated Parmesan cheese (2 oz.)
Directions:
- For dressing, in a bowl whisk together the fi rst fi ve ingredients (through garlic). Whisk in buttermilk. Season to taste with salt and pepper.
- Cut each head of lettuce in half lengthwise. Brush the lettuce halves all over with oil; season with salt and pepper. Grill lettuce, uncovered, over medium heat about 2 minutes or until lightly charred, turning once.
- Place lettuce portions on a serving platter with bacon and cherry tomatoes. Drizzle lettuce with dressing and top with cheese.
