Greens and Barley Salad
START TO FINISH 30 minutes
SERVES 4
Ingredients:
- 4 cups assorted greens, such as baby bok choy, endive, radicchio, and/or butter lettuce
- 2 1⁄4 cups coarsely chopped cauliflower
- 2 carrots, peeled and sliced into ribbons
- 1 cup cooked barley
- 1⁄4 cup chopped toasted walnuts
- 1⁄4 cup red wine vinegar
- 2 Tbsp. olive oil
- 2 Tbsp. honey
- 1 tsp. paprika
- 1⁄4 tsp. salt
- 1⁄8 tsp. cayenne pepper
Directions:
- Combine the first five ingredients (through walnuts) in a serving bowl. For dressing, in a screw-top jar combine the remaining ingredients. Cover and shake well. Drizzle over salad; toss.
