Spicy Carrot Chicken Sandwich

Ingredients:
- 3 cups chopped carrots
- 1 Tbsp. olive oil
- 1 6-oz. carton plain Greek yogurt
- 2 Tbsp. lemon juice
- 1 Tbsp. snipped fresh thyme
- 1 Tbsp. water
- 1 Tbsp. harissa paste
- 1⁄2 tsp. salt
- 2 cups chopped cooked chicken
- 1 cup thinly sliced celery
- 1⁄4 cup sliced almonds, toasted
- 1⁄4 cup golden raisins
- 16 slices wheat sandwich bread, toasted
- 8 leaves butterhead lettuce

Directions:
- 1. Preheat oven to 375°F. Line a 15×10-inch baking pan with foil. Place carrots in the prepared pan; drizzle with oil and toss to coat. Roast, uncovered, about 20 minutes or until tender. Let cool.
- 2. In a large bowl stir together the next six ingredients (through salt). Add carrots and the next four ingredients (through raisins); stir to coat. Serve chicken salad mixture on toasted bread with lettuce.
